Bubbles are what initially brought the founders of DeLille together in the late 1980s before the winery was formally founded. Happily, they have made a return! The 2020 Forget-Me-Not’s firm acid and linear style make it a perfect aperitif with our Pacific Northwest summer fare, with pleasant notes of Asian pear, honeysuckle, green apple, and crushed stone. The effervescence hits the palate broadly and becomes more delicate over time in the glass, with a pronounced minerality and hints of citrus rind that dance on the palate.

Visit The Lounge at DeLille Cellars and try two new cocktails: The Butterfly Effect and the Purple Paradise ($15 each). The Lounge will also be pouring Forget-Me-Not sparkling wine ($14/glass).

2 oz. The Butterfly Cannon Blue Tequila
3/4 oz. Simple Syrup
3/4 oz. Lemon Juice
3/4 oz. Egg White
Combine all ingredients in a cocktail shaker and “dry” shake 30-45 seconds vigorously. Add ice to shaker and continue to shake vigorously. Double strain into a cocktail glass and garnish with lemon wheel and butterfly pea blossoms.
The Purple Paradise
2 oz. Empress Gin
1 oz. Pomegranate Juice
1/2 oz. Orange Liqueur
1/2 oz. Lime Juice
1/2 oz. Simple Syrup
Combine all ingredients in a cocktail shaker with ice and shake to chill. Strain into a rocks glass over fresh ice. Top with club soda. Garnish with lime wheel.

Honey Lavender Lemonade Cocktail Recipe
2oz Empress 1908 Gin
1oz Lavender Honey Syrup
2oz Lemonade
Combine Lemonade and Lavender Honey Syrup in cocktail shaker and shake over ice. Double strain into rocks glass filled with crushed ice. Using the back of a bar spoon, layer the Empress Gin on top and fill glass with crushed ice. Garnish with a lavender sprig.
Lavender Honey Syrup:
Combine equal parts water and honey in a small sauce pan and heat until honey is dissolved. Add 2 Tbsp of dried lavender buds and let steep for one hour, stirring every 15 minutes. Strain the syrup and store in an air-tight container for up to two weeks in the refrigerator.

The Lounge at DeLille Cellars specializes in New American cuisine, crafted by Executive Chef Michael C. Toni. Chef Toni has partnered with DeLille Cellars for over 20 years and possesses both the experience and knowledge to craft spectacular pairings.

In addition to standard table seating, The Lounge restaurant also functions as a wine bar, where guests can relax in comfortable chairs and enjoy wine. Guests can be seated by the fireplace for a more intimate gathering in a comfortable sofa setting; in the middle of the action of our Main Dining Room at one of our Lounge Chair tables; or fireside on our raised platform in large wing-backed chairs. Two private dining rooms are also available for private events at The Lounge - the Alchemy Room and D2 Room.

Select Dates in March: Taste WA Wine Month Prix-Fixe Menus
Throughout March, The Lounge restaurant will feature prix-fixe pairing menus every Thursday through Sunday to celebrate Taste Washington Wine Month. These menus feature DeLille wines poured alongside other celebrated Washington wines that have a legacy tie to DeLille’s history, where winemakers have worked at DeLille in their early years and then went on to other wineries or to start their own. The Prix-Fixe menus are available on select days, along with the standard menu offerings.

A take on DeLille Cellar’s Date Night pick-up meals throughout the course of 2020, Wednesday night Date Nights at The Lounge are the perfect opportunity to enjoy local cuisine paired with DeLille Cellars wine. The date night menu changes weekly, and New American style dishes are crafted by Executive Chef Michael C. Toni. Main courses can range from Pan-Seared Black Cod to Grilled Pork Tenderloin to Fresh Gnochetti Sardi Pasta.
The Date Night menu includes a three-course dinner for two (starter, entree, and dessert) and a bottle of wine. Choose from four bottle choices including Chaleur Blanc, D2, Panther Creek Pinot Noir, and Panther Creek Chardonnay. Jessie Siren
Seattle-based singer Jessie Siren has been writing music since she was nine years old. She focuses on acoustic, folk-pop tunes.
Tyler Edwards
Beginning his career in 2008, Tyler Edwards wrote songs and fronted South Carolina rock band, I Anthem. After releasing two EPs and an LP, the band had multiple songs breaking the Top 10 on Billboard's Rock Charts and music featured on MTV and NASCAR. In 2017, Edwards independently released his first solo LP, A Few Good Hearts. The album was completely crowd funded and showcased a collection of songs about traveling, love, and faith. Since releasing his record, Tyler has sold out multiple Seattle venues and shared the stage with national acts such as Will Hoge, Nicki Bluhm, and The Steel Wheels.
Alex Britton
Alex Britton is a lead guitarist and singer from the UK. He performs a wide range of covers from old to new including the likes of The Beatles, The Rolling Stones, Lynyrd Skynyrd through to Mumford & Sons, The Lumineers, and Ed Sheeran.
Gina Belliveau
Originally from Baltimore, Gina Belliveau plays one-man-band, looped, percussive, acoustic soul-folk with an Achilles heel for ridiculous pop cover tunes in an ever-expanding repertoire running the gamut from Billie Holiday to Billie Jean, in addition to an arsenal of original songs.
Jaeden Luke
Seattle singer-songwriter Jaeden Luke writes acoustic pop music with hook-driven melodies and lyrics that guarantee to resonate with every listener. Thanks to his admiration of The Beatles, he learned guitar at age 9 and has pursued music ever since; now he is often vocally and musically compared to Ed Sheeran and John Mayer.
Live Music on The Deck
Currently, live music is held inside The Lounge. In the summer (weather permitting), live music will be held on The Deck, where guests can enjoy a glass of wine alongside bites and a lighter-fare deck menu.
Wednesday - Friday: Happy Hour at The Lounge
Enjoy Happy Hour specials at The Lounge Wednesday through Friday from 3 pm to 5 pm. Guests can enjoy $10 glass pours on select wine including D2, Triennes Rose, Panther Creek Chardonnay, Jean Baptiste Roussanne, and Panther Creek Pinot Noir. Looking for a different beverage? No problem! Our Woodinville restaurant features a wide selection of beer and cider on tap, including ales from Fair Isle Brewing, Black Raven, and Sumerian Brewing.

The Lounge Experience
The Lounge restaurant is located in the former Redhook Forecaster’s Public House, which has a long history in Woodinville as a gathering spot since 1994 when the Redhook facility first opened. DeLille Cellars looks forward to continuing the legacy of the Old Redhook Brewery as a hub of great food, libations, and memories for the community.
The Lounge offers an array of seating, including booths, stools by the fireplace, tables, a bartop, and lounge chairs for casual dining and sharing small plates.
The Deck is a seasonal patio experience that is available depending on the weather. The Deck offers a more casual dining experience with a separate menu. In the summer, live music is held on the outdoor patio.

DeLille Cellars Opens New Restaurant at Old Redhook Brewery Site: The Lounge at DeLille Cellars
DeLille Cellars, Woodinville’s third oldest winery, has opened a new wine-centric dining experience at the Old Redhook Brewery in Woodinville. Located adjacent to DeLille’s winery and tasting room, The Lounge at DeLille Cellars is a full-service restaurant and offers glass pours, comparative tastings, and a unique food menu crafted by Executive Chef Michael C. Toni.
In addition to DeLille wines, guests at The Lounge can experience wines that have inspired or are an alternative take on the winery’s own craft, as well as a host of local beers and other beverages curated by the DeLille Cellars winemaking team. The house-crafted menu ranges from light bites for sharing to salads, sandwiches and entrées such as steak frites and fresh pasta made daily. The Deck at DeLille Cellars is a seasonal outdoor experience on the back patio, perfect for al fresco dining.
The Restaurant Menu
The menu is directed by Executive Chef Michael C. Toni, who has worked with DeLille for nearly two decades catering private events and wine release dinners through his catering company A Platinum Event, as well as curating food and wine pairings at DeLille’s tasting room. Most recently, Chef Toni has led the Woodinville winery's “Date Night” meals, a weekly takeout dinner and wine experience that was a huge success since the first COVID-related closures in March of 2020.

With the move of its winery and remodel of the former brewery, DeLille established its headquarters at the Woodinville Old Redhook Brewery in 2019. The expansion into the restaurant comes a year and a half after DeLille opened its new three-story tasting room at the site, and marks nearly three decades since the winery’s founding in 1992 (DeLille will celebrate its 30th harvest this fall). Beyond indoor dining and a seasonal patio experience, The Lounge at DeLille Cellars also offers two rooms for smaller private dining experiences. DeLille is also currently renovating the upstairs event space that can hold up to 200 guests for receptions.

WOODINVILLE, WA (March 3, 2021) – DeLille Cellars, Woodinville’s third oldest winery, has announced that it is expanding at the Old Redhook Brewery in Woodinville. DeLille will be launching a new wine and food experience at the former Wheelhouse restaurant (originally Redhook's Forecaster's Public House). Located adjacent to DeLille’s winery and tasting room, The Lounge at DeLille Cellars will offer unique glass pours, flights, food and wine pairings, and spaces for private dining and small events. Come summer, the former patio will open as The Deck with an expanded menu. A remodel is underway, with DeLille aiming to have the space open in late spring or early summer.
