Our 2019 Grand Ciel Cabernet embraced the cool September weather that defined this outstanding vintage. The refreshingly moderate temperatures of the harvest season allowed for ample hangtime and flavor development, without high sugar accumulation. There are wonderful notes upfront of cassis, black currant and kirsch liqueur. The oak aromas gently offer hints of cinnamon stick, clove, caramel and vanilla bean. The depth and subtle nuances of this wine are best experienced after a lengthy decant, as truffle, graphite and tobacco leaf are discovered. At this early stage, the tannins are already quite resolved, approachable, and guide the alluring finish. This wine will surely age as long as you are able to cellar it. – NB

Our 2019 Grand Ciel Cabernet embraced the cool September weather that defined this outstanding vintage. Vineyard Notes
Grand Ciel Vineyard, located in the Red Mountain AVA, is a "state-of-the-art", no expense spared vineyard. The vineyard was meticulously designed to produce great vintages with a focus on both concentration and hang time complexity. Using GPS coordinates to track the Red Mountain sun, the vineyard was carefully planted at a specific Southwest to Northeast diagonal slope to achieve even ripening.
Production Notes
Cold soaked 24-36 hours, fermented 14-16 days on skin, aged 20 months in 100% new French oak and aged in bottle 18 months prior to release.

100% Cabernet Sauvignon. Grand Ciel Cabernet is a single vineyard, single estate & single clone Cabernet from our estate vineyard on Red Mountain. Every detail of our vineyard has been designated to produce the highest quality fruit from the unique climate & soil of this prestigious AVA known for ripe & structured Cabernet. Our rigorous selection process only permits a small portion of grapes to become part of Grand Ciel. First vintage 2004.
Food Pairing Notes
Venison, ribeye or wagyu and hearty beef stew are all fantastic partners for Grand Ciel along with flavorful aged cheeses such as vintage cheddar and Gorgonzola.
