Production Notes
Cold soaked 24-36 hours, fermented 14-16 days on skin, aged 20 months in 100% new French oak and aged in bottle 8 months prior to release.

67% Cabernet Sauvignon, 25% Merlot, 8% Cabernet Franc
Food Pairing Notes
Great pairing for grilled or roasted meats such as roast lamb, veal, venison and hard cheeses such as Cheshire. For older vintages, pairings such as duck or pheasant and lighter strews are also recommended.
