Cold soaked 24-36 hours, fermented 14-16 days on skin, aged 20 months in 100% new French oak and aged in bottle 18 months prior to release.

100% Cabernet Sauvignon. Grand Ciel Cabernet is a single vineyard, single estate & single clone Cabernet from our estate vineyard on Red Mountain. Every detail of our vineyard has been designated to produce the highest quality fruit from the unique climate & soil of this prestigious AVA known for ripe & structured Cabernet. Our rigorous selection process only permits a small portion of grapes to become part of Grand Ciel. First vintage 2004.

Venison, ribeye or wagyu and hearty beef stew are all fantastic partners for Grand Ciel along with flavorful aged cheeses such as vintage cheddar and Gorgonzola.
